The Loafer’s Chef of the Week is Ashley Higgins. Ashley works at Unicoi Grill located on 3615 Unicoi Drive. The business is open from 11AM-9PM seven days a week. Ashley is 32 years old and has been cooking for 15 ½ years, claiming it has definitely become her passion. She loves getting to make food that shows and represents her ideas, as well as being able to put her own personal spin on everyday classic foods. She states that cooking can be stressful and chaotic, but seeing her customers smile and clean their plates makes it all worth it.
Ashley’s workplace has a wide variety of made-from scratch foods to choose from in order to cater to everyone’s different wants and cravings. For lunch, they have daily specials that rotate but almost always include burgers, chicken, chicken-salad croissants, and now the new philly cheesesteak hoagie with fries. Her dinner selection features hand-cut steaks, catfish, pollock, shrimp, pulled pork, both full and half slab ribs with homemade barbeque sauce, and a porkchop she says is to die for. All of her dinners come with two homemade sides. If a meaty dinner is not your style, they also serve wings, flatbread pizzas (she personally suggests the Smokehouse) and salads accompanied by made-from-scratch dressings.
