As the Summer grilling season winds down, my family and I have really gotten a lot of use out of our grill this season. We plan to keep on using it right into the cooler months too! One of our favorite things to grill, alongside meat, is broccoli! That’s right! Grilled vegetables are nothing new. We’ve all had grilled onions, peppers, and corn. You might not think at first that broccoli would do well on the grill, but all you need is some tin foil or a veggie basket and it cooks wonderfully well with nothing more than some chopped garlic and olive oil.
You never know when inspiration will hit you, I sure wouldn’t have thought a recipe brainstorm would have kicked up during a recent hiking trip, but it sure did! I often like to take a break and go hiking in the woods of middle Erwin, it’s good to get an escape from the family for a few hours. Don’t get wrong! I love them! Especially my three kids, Chloe, Cody, and Cadence. Yet, still, you need some time to yourself or we’d all go crazy? Right? LOL!
Now even though hiking isn’t a dangerous thing, I still like to go into every situation I encounter in my daily life assuming that I will need to survive off of supplements and drinking my own urine. Armed with a canteen, a knapsack, and some protein pellets, off I went into the woods on a lovely, not too hot, early Summer day. I was following my usual trails, nothing too crazy, nothing I hadn’t done before.
Then, a sudden rainstorm kicked in. Soon the dry trail I was enjoying with low humidity became a damp mess of loose traction! Not one to give up so easily, I kept trekking onward, feeling in my gut that the sky would part and I’d be back on dry land soon. My gut was wrong! I guess it was hungry! LOL! A few steps ahead in my journey my footing slipped and I soon found myself on a tiny mudslide down the side of a hill!
Now, most adults have lived to know what to do when you find yourself sliding down a muddy hill. You try to hold on and pretend it’s Disney! LOL! I began eating my protein pellets just in case, while also ducking my head the best I could to avoid rogue branches, I soon found myself smack dab in the middle of a backyard where—get this—it hadn’t even rained! Oh, East Tennessee, never change.
A family was out in the yard having a cookout and I think I scared them. But I soon noticed they were grilling veggies! My fave! I asked what they were grilling and they, having no questions for the mud-covered human who suddenly appeared in their backyard, told me they were grilling broccoli!
“Wow! My family would love that, especially my three kids, Chloe, Cody, and Cadence!” I said. Sure enough, once I returned to civilization and took a shower, my family loved the grilled broccoli! Even my gam gam came by later that night and she loved the broccoli too! I’m sure your family and friends will as well! Cut up some broccoli, chop two cloves of garlic, toss in olive oil, then place in a veggie basket or on some foil you’ve set on the grill! Enjoy! Follow for more recipes!
